Located in the village of Montigny, near Auxerre, their six-room B&B is a quintessentially French 17th-century mansion with oeil-de-boeuf windows in its steep slate gables and smart white shutters. Inside it’s a wholly different story. In converting it, Bouman and Franssens retained its ancient beams, wood panelling and baroque fireplaces, but otherwise opted for an entirely modern look, featuring bespoke pieces from “some of the most talented Dutch designers”, with whom they were keen to continue collaborating.
