Perched high on a hill overlooking stretches of beaches that make up the southern coast of New South Wales sits Bannisters By The Sea. Opened by celebrity chef Rick Stein in 2009 and now under The Salter Brothers ownership, this upscale beachfront property looks like just another motel from the outside but inside you will find pockets of surprises that please gastronomes, wellness-gurus and leisure-seekers. 34 bright, luxurious and airy rooms ranging up to highly spacious suites. The Penthouse designed by Aussie fashion designer Collette Dinagan includes a kitchenette, ocean views, large lounge with a dining area and spectacular views of the sunrise - it’s hard to beat. 

Onsite you will find a wellness centre with an infrared sauna, as well as an infinity pool with views of the sea. There is a simple pool-side restaurant but locals and tourists-alike all travel for the dining experience at Rick Stein’s namesake restaurant where local produce takes centre stage. The beach is a mere 5-minute drive away and further afield you will find stunning family-run estates like Cupitt’s Winery which can’t be missed when in the region.
