This accommodation is unique for managing to combine romance, luxury and an eco-friendly way of doing things. Ideal for couples, each of the 7 modges stands on stilts overlooking a lake and is a perfect cosy retreat to curl up in after a long day of sight-seeing. The restaurant serves entirely organic and seasonal cuisine, and if it isn't homegrown it is locally sourced: the grounds are littered with bee-hives, orchards and vegetable patches. The wellness spa is of particular note, boasting massage facilities, a Norwegian bath and a Swedish-style sauna, as well as an open-air, outdoor swimming pool. The modges themselves are cosy and designed with simplicity in mind, mainly made out of wood, with private terraces overlooking the lake with furniture you can lounge on as you play music from your iPod dock. Les Echasses is ideally placed: it has direct access to 3 local golf courses, trips to which can be organised through reception, and both Basque country and Spain are within a 30 minute drive.
