The Fairmont Empress is one of the country's most iconic chateau-style hotels, and Victoria's oldest. Everyone from John Wayne (who once slung cocktails for strangers in the bar) to Bing Crosby has checked in - the latter said to have felt so at home, he'd wander the halls sans toupee.

Impossibly high ceilings and art-filled walls lead the way to muted yet resplendent rooms, blending neutral palettes with jewel tones and modern patterns. Choose from city views up to the Royal Suite's panoramic vistas of Parliament buildings and the waterfront.
