Hotel review
With a history that dates back to 1228, Ashford Castle has an impressive back story that records the life of the Irish gentry including the unforgettable Guiness name. It has operated as a hotel since the 1930s and has hosted many important international names, from royalty and politicians to film stars and iconic sports men and women. Red Carnation Hotels took over the reigns in 2013, and have since transformed this property into not only one of the best hotels in Ireland, but really in the world.
Whilst the castle exterior may be impressive, just wait till you get inside! The attention to detail is phenomenal, resulting in a stunning piece of interior design which really transports you back in time, to when this castle was in its private heyday. The entrance hall is breath-taking with oak panelled walls, deep red walls covered with original artworks, an impressive fireplace and Waterford crystal chandeliers. Everywhere you look, you’ll notice another little object that makes you catch your breath, from the original 17th century suit of armour to the vast silver tea set that was commissioned by the guy who built New York's Brooklyn Bridge. The stunning interiors are echoed in the sumptuous bedrooms and suites. Each is individually designed, but all boast luxurious fabrics, antiques, original artworks and the little things that really matter, like beautifully comfy beds, dressed with the best linens, and spoiling marble bathrooms with signature Red Carnation toiletries and monogrammed fluffy towels.
For entertainment and dining, Ashford Castle really delivers. First of all head to the cosy Prince of Wales bar for a pre-dinner tipple. The vibe here is clubby and relaxed, and the cocktails superb. If it’s fine dining you’re after, then the George V dining room will not disappoint. Dishes are created from local seasonal produce and executed with the panache of a chef who really knows what they’re doing. The setting adds to the sense of grandeur (it was created for the visit of the soon-to-be George V who was Prince of Wales at the time) and the staff are not only friendly, but hugely knowledgeable both about the food and wine. For something a little less formal head to Cullens at the Cottage where it’s all about locally inspired dishes, created from the freshest seafood. It’s warm, welcoming and a fun casual alternative to the main building. And if you can’t be bothered to walk the 100m across the bridge, there’ll be a friendly driver happy to transfer you there! After dinner, you can either chill in the drawing room listening to some live music or head up to the private cinema, where they have a different film showing every night.
One of the other areas where Ashford Castle really excels is in the wide range of activities and experiences that they can offer. Fancy a spoiling treatment in the wonderfully restorative spa? No problem! (Don’t forget to head down there before your treatment for some additional “me time” by the small but beautiful pool in the conservatory.) Want to get out on the water? Ask the concierge to get Seamus (a hugely knowledgeable local) to take you on a boat tour — it’s great not only to hear the fascinating history of the estate, but also to see it from a different perspective. Afternoon Tea is another institution that it would be foolish to miss. Sit yourself down in the beautiful Connaught room, surrounded by exceptional antiques, and enjoy that most traditional of events (all washed down by a glass of bubbly, of course). Or what about a wine tasting in the atmospheric cellars? The inspiring sommelier is not only instructive, but also hugely entertaining. Not to mention the nine hole golf course, falconry, horse riding, all weather tennis courts…
Ashford Castle delivers in so many areas. It’s a stunning luxury resort hotel, where everyone is welcome and where the staff go above and beyond. It embodies everything that the Red Carnation group stands for: luxury, service and a very personal touch, and is a truly wonderful destination.
